According to a press release, Detroit Wing Company, a Michigan-based wing company, has opened its first of two commissaries that will create sauces for each restaurant.
The 400-square-foot space, also known as the “mini-commissary”, is an extension to the original DWC location at 17535 E. 9. Mile Rd. in Eastpointe, Michigan. Production began in November 2021 at 5,000 gallons per month. With 24-hour production underway, that number will rise to 12,000
Oakland County will soon open a second commissary, covering nearly 50,000 square feet. It will produce approximately 30,000 gallons of sauce each month, with a maximum of 240,000 gallons.
Gus Malliaras (founder of Detroit Wing Company), stated in the release that “our expansion plans were growing every week” and that facilities needed to produce and supply sauces to all of their stores. This would help ensure consistency in each order. These commissary locations will enable us to concentrate on what we do best, which is providing our customers an exceptional and consistent experience.
The kettle is used to quickly chill the sauces by both commissaries. DWC can produce natural sauces without the use of stabilizers or preservatives.
DWC will partner with a Michigan-based culinary college to offer staff and students the opportunity to tour the larger commissary building and receive rare hands-on training. This is in keeping with the company’s commitment to the community.
